Description

This Bulgogi Sauce is a flavorful Korean BBQ beef marinade combining savory soy sauce, sweet sugars, aromatic garlic and ginger, nutty sesame oil, and the natural sweetness and tenderizing effect of grated Asian pear. Perfect for marinating thinly sliced beef to create tender, juicy, and deliciously seasoned bulgogi, a classic Korean dish.

Ingredients

Scale

Bulgogi Sauce Ingredients

  • 1/2 cup soy sauce
  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons minced garlic
  • 1 tablespoon grated ginger
  • 1 tablespoon sesame oil
  • 2 tablespoons mirin (or sweet rice wine)
  • 1 tablespoon rice vinegar
  • 1 pear (Asian pear preferred), grated
  • 1 teaspoon ground black pepper
  • 2 green onions, finely chopped
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. Mix Soy Sauce & Sugars: Combine soy sauce, white sugar, and brown sugar in a bowl. Stir continuously until the sugars are fully dissolved, creating a smooth, balanced base for the sauce.
  2. Add Aromatics: Incorporate the minced garlic, grated ginger, and sesame oil into the soy sauce mixture. Stir well to blend these aromatic flavors evenly throughout the sauce.
  3. Incorporate Liquids: Add mirin and rice vinegar to the mixture, whisking gently to ensure all liquids are fully combined, lending sweetness and slight acidity to balance the flavors.
  4. Add Pear: Stir in the grated Asian pear to introduce natural sweetness and enzymes that help tenderize the meat during marination.
  5. Season: Add ground black pepper, finely chopped green onions, and sesame seeds if desired. Mix thoroughly for an even distribution of seasoning and texture.
  6. Marinate & Cook: Use this sauce to marinate thinly sliced beef for at least 30 minutes. After marinating, grill or pan-fry the beef slices over medium-high heat until cooked through and caramelized on the edges for authentic bulgogi flavor.

Notes

  • Asian pear is preferred due to its natural tenderizing enzymes, but you can substitute with a crisp apple if unavailable.
  • Marinating for longer than 30 minutes (up to 4 hours) enhances flavor and tenderness.
  • For a spicier version, add a teaspoon of gochujang (Korean chili paste) or crushed red pepper flakes.
  • Use fresh garlic and ginger for the best aromatic impact.
  • The sauce can also be used as a dipping sauce or drizzled over cooked meat for extra flavor.
