Ingredients
Scale
Chicken and Filling
- 4 large chicken breasts
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- ½ cup ranch dressing
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
Breading and Coating
- 1 cup breadcrumbs
- 2 tbsp olive oil
Instructions
- Preheat Your Oven: Preheat your oven to 375°F (190°C) to prepare for even cooking and to develop a golden crust on the chicken bombs.
- Prepare the Chicken: Butterfly each chicken breast by slicing horizontally without cutting all the way through, creating a pocket to hold the filling while keeping the chicken intact.
- Mix the Filling: In a medium bowl, combine shredded cheddar cheese, crumbled bacon, ranch dressing, garlic powder, salt, and black pepper. Stir well to ensure all ingredients are evenly mixed.
- Stuff the Chicken: Generously fill each chicken breast pocket with the cheese and bacon mixture. Use toothpicks to secure the opening if the filling spills out.
- Coat & Bake: Pour olive oil into a shallow dish. Dip each stuffed chicken breast into the oil, then roll in breadcrumbs until fully coated. Place on a parchment-lined baking sheet and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the coating is golden brown.
- Serve & Enjoy: Allow the chicken bombs to cool slightly, remove toothpicks, and serve with extra ranch dressing for dipping.
Notes
- Ensure not to slice the chicken breasts all the way through when butterflying to keep the filling secure.
- To check doneness, use a meat thermometer to confirm the internal temperature of 165°F (75°C).
- For extra crispiness, broil the chicken bombs for 1-2 minutes at the end of baking, watching carefully to avoid burning.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
