Instructions
- Prepare peanut butter mixture: In a large bowl, cream together the peanut butter, softened butter, and powdered sugar until you achieve a smooth consistency. Then fold in the Rice Krispies cereal evenly to combine all ingredients well.
- Shape the balls: Roll the mixture into approximately 1-inch diameter balls and place them on a baking sheet lined with parchment paper. Freeze the balls for 20 minutes to allow them to firm up, which helps with dipping later.
- Melt the chocolate: Place the chocolate chips in a microwave-safe bowl and microwave in 30-second intervals, stirring after each interval until the chocolate melts completely and is smooth.
- Dip and chill: Dip each peanut butter ball into the melted chocolate to coat it fully, then place them back on the parchment-lined baking sheet. Chill in the fridge until the chocolate hardens and the balls are set.
- Storage: Store the peanut butter balls in the refrigerator for up to one week or freeze them for a few months to keep them fresh.
