For the Corn Dogs Batter
- 1 cup ground yellow cornmeal
- 1 cup all purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk

- 1/2 cup canola oil (for frying)
- 24 beef cocktail franks

Instructions
- Mix Dry Ingredients: In a shallow bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir until evenly mixed to ensure a uniform batter.
- Mix Wet Ingredients: In a separate bowl, whisk together the egg and milk until smooth. Pour the wet mixture into the dry ingredients and stir well to form a consistent batter.
- Heat Oil: Pour about 1/2 cup of canola oil into a large skillet and heat over medium-high heat. Test the oil’s temperature by adding a drop of batter or water; if it ‘pops’, the oil is ready.
- Prepare Franks: Pierce each beef cocktail frank with a skewer to hold them securely for dipping and frying.
- Dip and Fry: Dip each skewered frank into the batter, coating all sides thoroughly. Carefully place them into the hot oil and fry 1-2 minutes per side until golden brown and crispy. Do not overcrowd the pan; fry in batches as needed.
- Drain and Serve: Remove the fried corn dogs from the skillet and place them on a paper towel-lined sheet pan to drain excess oil. Once all are cooked, arrange on a serving platter and serve warm with mustard or your preferred dipping sauce.
