Ingredients
Scale
Rice
- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 2 cups water
Chicken and Vegetables
- 1 lb chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 cup mixed vegetables (bell peppers, carrots, peas)
- Salt and pepper to taste
Garnish
- Fresh cilantro for garnish
Instructions
- Rinse Rice: Rinse the jasmine rice under cold water until the water runs clear to remove excess starch and ensure fluffy rice.
- Cook Rice: In a pot, combine the rinsed rice, coconut milk, and 2 cups of water. Bring the mixture to a boil on the stovetop.
- Simmer Rice: Reduce the heat to low, cover the pot, and let the rice simmer for 15 minutes or until all liquid is absorbed and the rice is tender.
- Heat Oil and Season Chicken: While the rice cooks, heat olive oil in a skillet over medium heat. Add the diced chicken along with garlic powder, ginger powder, salt, and pepper for seasoning.
- Cook Chicken: Cook the chicken for 7-10 minutes, stirring occasionally, until fully cooked and no longer pink inside.
- Add Vegetables: Add the mixed vegetables to the skillet with the chicken and continue stir-frying for another 3-5 minutes until vegetables are tender-crisp.
- Fluff Rice and Assemble: Once rice is done, fluff it with a fork. Serve the coconut rice in bowls topped with the cooked chicken and vegetable mixture.
- Garnish: Sprinkle fresh cilantro over the bowls just before serving to add a fresh, herbal note.

- You can use frozen mixed vegetables as a convenient alternative.
- Adjust the amount of soy sauce according to your taste and dietary needs.
