Instructions

  1. Combine Ingredients: In a medium saucepan over medium heat, combine carrots, milk, light brown sugar, grated fresh ginger, salt, and cinnamon. Bring the mixture to a low boil carefully while stirring occasionally to prevent sticking or burning.
  2. Simmer Until Tender: Reduce the heat to low and let the mixture simmer gently, stirring often, for about 25 minutes or until the carrots are very tender and cooked through.
  3. Reserve Cooking Liquid & Add Butter: Ladle out ½ cup of the cooking liquid and set it aside for later use. Then add the butter to the saucepan, allowing it to melt into the mixture.
  4. Blend the Puree: Using an immersion blender, blend the carrot mixture directly in the saucepan until completely smooth. Scrape down the sides of the pan as needed to ensure even blending.
  5. Adjust Consistency: If the puree is thicker than desired, slowly add the reserved cooking liquid one to two tablespoons at a time while blending until you reach a smooth, creamy consistency.
  6. Serve: Transfer the finished carrot puree to a serving bowl and garnish with freshly chopped chives. Serve warm alongside your main dishes.
