Instructions
- Combine Ingredients: In a medium saucepan over medium heat, combine carrots, milk, light brown sugar, grated fresh ginger, salt, and cinnamon. Bring the mixture to a low boil carefully while stirring occasionally to prevent sticking or burning.
- Simmer Until Tender: Reduce the heat to low and let the mixture simmer gently, stirring often, for about 25 minutes or until the carrots are very tender and cooked through.
- Reserve Cooking Liquid & Add Butter: Ladle out ½ cup of the cooking liquid and set it aside for later use. Then add the butter to the saucepan, allowing it to melt into the mixture.
- Blend the Puree: Using an immersion blender, blend the carrot mixture directly in the saucepan until completely smooth. Scrape down the sides of the pan as needed to ensure even blending.
- Adjust Consistency: If the puree is thicker than desired, slowly add the reserved cooking liquid one to two tablespoons at a time while blending until you reach a smooth, creamy consistency.
- Serve: Transfer the finished carrot puree to a serving bowl and garnish with freshly chopped chives. Serve warm alongside your main dishes.
