Description

A luscious and creamy pasta sauce featuring roasted garlic and zesty lemon, delivering a rich and tangy flavor that perfectly complements any pasta dish. This easy-to-make sauce combines the sweetness of slow-roasted garlic with the brightness of fresh lemon and the sharpness of Parmesan for a delightful gourmet experience.

Ingredients

Scale

Garlic Roasting

  • 1 head of garlic
  • 2 tablespoons olive oil

Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the garlic head.
  2. Prepare Garlic: Cut off the top portion of the garlic head to expose the cloves, drizzle it with olive oil, then wrap it tightly in aluminum foil to retain moisture during roasting.
  3. Roast Garlic: Place the foil-wrapped garlic on a baking tray and roast in the oven for 30-35 minutes, or until the cloves become soft and aromatic.
  4. Combine Ingredients: In a saucepan, add the heavy cream, squeeze out the roasted garlic cloves from their skins and add them in, along with the lemon zest and lemon juice.
  5. Heat Mixture: Warm the mixture over medium heat, stirring continuously to blend the flavors and dissolve the roasted garlic throughout the cream.
  6. Add Cheese and Seasoning: Stir in the grated Parmesan cheese, then season with salt and pepper to taste. Continue stirring until the cheese melts completely and the sauce achieves a smooth, creamy consistency.
  7. Serve: Spoon the rich sauce generously over your favorite cooked pasta and garnish with freshly chopped parsley for a fresh, herbaceous finish.

Notes

  • Roasting garlic mellows its flavor, adding sweetness and depth to the sauce.
  • You can prepare the roasted garlic ahead of time and refrigerate it for up to 3 days.
  • Use freshly grated Parmesan cheese for the best melting and flavor.
  • This sauce pairs well with fettuccine, linguine, or penne pasta.
  • Adjust lemon juice to taste for more or less tanginess.
