Ingredients
Scale
Garlic Roasting
- 1 head of garlic
- 2 tablespoons olive oil
Sauce
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the garlic head.
- Prepare Garlic: Cut off the top portion of the garlic head to expose the cloves, drizzle it with olive oil, then wrap it tightly in aluminum foil to retain moisture during roasting.
- Roast Garlic: Place the foil-wrapped garlic on a baking tray and roast in the oven for 30-35 minutes, or until the cloves become soft and aromatic.
- Combine Ingredients: In a saucepan, add the heavy cream, squeeze out the roasted garlic cloves from their skins and add them in, along with the lemon zest and lemon juice.
- Heat Mixture: Warm the mixture over medium heat, stirring continuously to blend the flavors and dissolve the roasted garlic throughout the cream.
- Add Cheese and Seasoning: Stir in the grated Parmesan cheese, then season with salt and pepper to taste. Continue stirring until the cheese melts completely and the sauce achieves a smooth, creamy consistency.
- Serve: Spoon the rich sauce generously over your favorite cooked pasta and garnish with freshly chopped parsley for a fresh, herbaceous finish.
Notes
- Roasting garlic mellows its flavor, adding sweetness and depth to the sauce.
- You can prepare the roasted garlic ahead of time and refrigerate it for up to 3 days.
- Use freshly grated Parmesan cheese for the best melting and flavor.
- This sauce pairs well with fettuccine, linguine, or penne pasta.
- Adjust lemon juice to taste for more or less tanginess.
