- 1 block firm or extra-firm tofu (about 14 oz)
- 1/4 cup teriyaki sauce
Rice

- Water for cooking rice as per package instructions

- 2 ripe avocados
- 1/2 cup fresh vegetables (such as cucumber, carrots, or radishes), thinly sliced or julienned
- 2 tablespoons toasted sesame seeds (or chopped peanuts or almonds)
- 2 tablespoons sliced green onions or chives
- 1 tablespoon cooking oil (vegetable or canola oil) for frying tofu
Instructions
- Prepare the Tofu: Wrap the tofu block in a clean kitchen towel and place a heavy object on top to press out excess moisture for 15-20 minutes. Then cut the pressed tofu into bite-sized cubes.
- Marinate the Tofu: Place the tofu cubes in a bowl, pour over the teriyaki sauce, and mix well to coat evenly. Allow the tofu to marinate for at least 30 minutes to absorb the flavors.
- Cook the Rice: While the tofu marinates, cook the sushi rice according to the package instructions. Once done, set the rice aside to cool slightly to make layering easier.
- Fry the Tofu: Heat a non-stick skillet over medium-high heat and add a splash of oil. When hot, add the marinated tofu cubes and fry them for about 8-10 minutes, turning occasionally, until golden brown and crispy on all sides.
- Prepare the Avocado: While the tofu cooks, slice the ripe avocados into thin pieces or mash them if you prefer a spreadable texture for layering.
- Assemble the Stack: In a serving dish, layer the stack by starting with a layer of rice, followed by a layer of the crispy tofu, then a layer of avocado. Repeat layering all ingredients until used up, finishing with avocado on top.
- Garnish: Sprinkle toasted sesame seeds and sliced green onions over the top of the stack for added flavor and a nice presentation.
