Marinade & Chicken

  • 16 ounces Chicken
  • 2 cloves Garlic
  • 1 tablespoon Red Wine Vinegar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 3 tablespoons Greek yogurt
  • 2 teaspoons Dried oregano
  • ¾ teaspoon Salt
  • ½ teaspoon Black pepper

Vegetables & Toppings

  • 2 ounces Red onion (diced)
  • 20 ounces Cucumber (diced)
  • 8 ounces Tomato (diced)
  • 40 Kalamata Olives
  • 8 ounces Feta Cheese
  • 1 cup Tzatziki Sauce


Instructions

  1. Make the marinade: In a large bowl, combine all of the marinade ingredients including garlic, red wine vinegar, lemon juice, olive oil, Greek yogurt, dried oregano, salt, and black pepper, whisking them together until well incorporated.
  2. Marinate the chicken: Place the chicken in a gallon freezer bag, pour the marinade over it, seal the bag, and refrigerate for 4 hours to allow the flavors to penetrate the meat.
  3. Cook the chicken: Remove the chicken from the marinade and wipe off any excess. Cook the chicken to an internal temperature of 165°F by choosing one of the following methods: grilling, baking at 400°F for approximately 20 minutes, or cooking in a skillet over medium-high heat for 15-20 minutes.
  4. Slice the chicken: Once cooked through, let the chicken rest briefly, then cut it into thin slices suitable for serving in bowls.
  5. Assemble the gyro bowls: Divide the sliced chicken, diced red onion, cucumber, tomato, Kalamata olives, feta cheese, and tzatziki sauce equally among 4 bowls.
  6. Serve: Finish each gyro bowl with a fresh squeeze of lemon juice and toss the ingredients together before eating for enhanced flavor and texture.
