  • 2 ripe mangoes, peeled and chopped
  • 1 cup plain Greek yogurt (full-fat recommended)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon freshly squeezed lemon juice
  • Pinch of salt


Instructions

  1. Blend the mangoes: Place the peeled and chopped mangoes in a blender or food processor and blend until completely smooth, ensuring there are no large chunks.
  2. Combine ingredients: Add the Greek yogurt, honey or maple syrup, freshly squeezed lemon juice, and a pinch of salt to the blended mangoes. Blend again until the mixture is fully combined and creamy.
  3. Pour into molds: Carefully pour the mango yogurt mixture into popsicle molds, leaving some space at the top to allow for expansion during freezing.
  4. Insert sticks and freeze: Insert popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 hours or until the popsicles are completely solid.
  5. Unmold the popsicles: To remove the pops, briefly run warm water over the outside of the molds to loosen them, then gently pull out each frozen mango yogurt pop.

Notes

  • Use full-fat Greek yogurt for the creamiest texture; low-fat or non-fat can be used but may affect creaminess.
  • Adjust sweetness by adding more or less honey or maple syrup based on your taste and the ripeness of mangoes.
  • To avoid icy texture, blend ingredients thoroughly and use ripe mangoes with natural sweetness.
  • Make sure to leave space at the top of molds for mixture expansion when freezing to prevent overflow or cracking.
  • If you don’t have popsicle molds, small paper cups can be used as an alternative.
