Potatoes and Seasonings
- 1 lb. Yukon Gold potatoes, diced into ½-inch cubes (or red-skinned or fingerling potatoes)
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground pepper
- 1 tbsp olive oil
Steak and Butter
- 1½ lbs. sirloin steak, cut into 1-inch cubes (alternative options: beef tenderloin, NY strip steak, or stir fry meat)
- 4 tbsp unsalted butter, divided (½ stick)
- Freshly chopped parsley, optional for garnish
Instructions
- Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt completely and start to sizzle, preparing the skillet for cooking.
- Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes for about 4 minutes without stirring to develop a crispy exterior. Then stir and continue cooking for another 3-4 minutes until potatoes are fork tender. Remove the potatoes from the skillet and set them aside in a bowl.
- Sear the steak bites: Increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted. Add the steak cubes in a single layer, cooking for 1 minute without moving to get a good sear. Flip or stir the steak bites and cook for an additional 1-2 minutes or until steak reaches your desired doneness. Remove from heat.
- Toss potatoes and steak together: Return the cooked potatoes to the skillet with the steak bites. Toss gently to combine and heat through evenly. Adjust seasoning with additional salt and pepper if desired.
