Scale
Main Ingredients
- 4 large russet potatoes, peeled and diced
- 8 cloves of garlic, minced
- 1 large onion, chopped
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons salt (or to taste)
- 1 teaspoon black pepper (or to taste)
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Sauté the Onions: Begin by heating the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add Garlic: Add the minced garlic to the pot and sauté for an additional 2 minutes, stirring frequently to prevent burning. The garlic should be fragrant.
- Add Potatoes: Add the diced potatoes to the pot and stir to coat them in the garlic and onion mixture. These potatoes will provide the base of your soup.
- Add Broth and Simmer: Pour the vegetable broth into the pot, covering the potatoes completely. Bring to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20 minutes or until the potatoes are tender.
- Blend the Soup: Once the potatoes are soft, remove the pot from heat. Using an immersion blender, blend the soup until creamy and smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a traditional blender.
- Add Cream and Seasonings: Return the blended soup to the pot over low heat. Stir in the heavy cream, dried thyme, salt, and black pepper. Allow the soup to heat through for an additional 5 minutes, stirring occasionally.
- Finish with Lemon Juice: Add the fresh lemon juice to the soup and adjust seasoning if needed. This will add a fresh zing and help balance the flavors.
- Serve: Ladle the soup into bowls and garnish each serving with fresh chopped parsley.
Notes
- You can adjust the garlic quantity to taste for a milder or stronger garlic flavor.
- For a vegan version, substitute heavy cream with coconut cream or a plant-based cream alternative.
- If you prefer a chunkier texture, blend only half the soup and mix back in the rest of the potatoes.
- Use fresh herbs like thyme or parsley if available for the best flavor.
- Serve with crusty bread or a light salad for a complete meal.
