Instructions

  1. Cook the beef and aromatics: Heat the olive oil in a large pot over medium-high heat. Add the ground beef, diced onion, and minced garlic. Cook, stirring occasionally, for 8-9 minutes or until the beef is browned and no longer pink, and the onions are softened.
  2. Add the soup base: Stir in the tomato paste, beef broth, Worcestershire sauce, Italian seasoning, and sugar. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer gently for 10 minutes to allow the flavors to meld.
  3. Simmer with vegetables: Add the cubed potatoes and frozen mixed vegetables to the pot. Bring the soup back to a simmer and cook for 10-15 minutes, or until the potatoes are tender when pierced with a fork.
