Description

These Mediterranean Spinach Quesadillas are a quick and delicious fusion dish combining the fresh flavors of sautéed spinach with creamy feta and mozzarella cheeses. Perfectly golden and crispy on the outside, with a savory, cheesy filling inside, they make for a healthy, satisfying meal or snack ready in just 20 minutes.

Ingredients

Scale

Quesadilla Filling

  • 2 cups fresh spinach, washed and dried thoroughly
  • 1 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 tsp oregano
  • Salt to taste
  • Pepper to taste

Quesadillas

  • 4 large flour tortillas, room temperature
  • 2 tbsp olive oil (divided: 1 tbsp for sautéing, 1 tbsp for cooking quesadillas)

Instructions

  1. Prep the Spinach: Heat 1 tablespoon of olive oil in a medium pan over medium heat. Add the fresh spinach and sauté it until wilted, about 3 minutes. Be careful not to overcook it to maintain its bright color and texture.
  2. Mix the Filling: Remove the spinach from heat and combine it with crumbled feta cheese, shredded mozzarella, oregano, salt, and pepper. Stir well to distribute the seasonings evenly throughout the mixture.
  3. Assemble Quesadillas: Lay out each flour tortilla and spread the filling evenly on one half of each tortilla. Fold the tortilla over the filling to create a half-moon shape. This should take about 1 minute.
  4. Cook the Quesadillas: Clean the skillet and heat the remaining 1 tablespoon of olive oil over medium heat. Place each folded tortilla in the skillet and cook until each side is golden brown and crispy, about 3-4 minutes per side, for a total of 6-8 minutes.
  5. Finish and Serve: Remove the quesadillas from the pan and let them rest for 2 minutes to set. Then slice them into triangles using a sharp knife and serve warm for the best taste and texture.

Notes

  • Ensure spinach is well dried before sautéing to prevent excess moisture in the quesadilla.
  • Feel free to add a pinch of red pepper flakes for a spicy kick.
  • Use whole wheat tortillas for a healthier option.
  • Leftover quesadillas can be reheated in a skillet or air fryer for crispiness.
