- 1 drop pink food colouring (more if desired)
Instructions
- Prepare the Freezing Area: Line a rimmed cookie sheet with parchment paper and set it aside. Clear space in your freezer to accommodate this cookie sheet for freezing the assembled sandwiches.
- Whip the Cream: In a stand mixer fitted with a whisk attachment, combine the heavy cream, confectioners’ sugar, and granulated sugar. Start mixing on low speed until the mixture begins to thicken, then increase to high speed and whisk until fluffy peaks form.
- Prepare Lemonade Cream Cheese Mixture: In a separate bowl, use a mixer to whip the softened cream cheese until smooth and free of lumps. Gradually add the pink lemonade mix and pink food coloring, blending until fully incorporated.
- Combine Mixtures: Add the cream cheese mixture to the whipped cream. Using the mixer on medium speed, whisk until the mixture is smooth and uniform.
- Pipe the Filling: Transfer the ice cream mixture into a piping bag. Pipe a generous dollop onto the flat side of one nilla wafer and sandwich it with another wafer.
