Ingredients
Scale
Ravioli
- 1 package fresh ravioli (cheese or your choice of filling)
Vegetables and Herbs
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 pint cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
Oils and Seasonings
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
Optional Toppings
- Freshly grated Parmesan cheese (optional, for serving)
Instructions
- Cook the ravioli: Bring a large pot of salted water to a boil. Cook the ravioli according to the package instructions, usually about 3-5 minutes until they float to the surface. Drain the ravioli, reserving a small amount of pasta water for later use.
- Sauté garlic: While the ravioli cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Cook asparagus: Add the trimmed asparagus pieces to the skillet and sauté for 3 to 4 minutes, cooking until tender yet still crisp to retain their bright color and texture.
- Add cherry tomatoes: Stir in the halved cherry tomatoes and cook for another 2 to 3 minutes until the tomatoes start to soften and release their juices.
- Season vegetables: Season the sautéed vegetables with salt, freshly ground black pepper, and crushed red pepper flakes if using, stirring well to combine the flavors.
- Toss ravioli with vegetables: Add the cooked ravioli to the skillet with the vegetables. Gently toss everything together to combine. If the mixture seems dry, add a splash of the reserved pasta water to create a light sauce that coats the ravioli and vegetables.
- Add fresh herbs: Stir in the chopped fresh basil and parsley to add freshness and a burst of herbal flavor to the dish.
- Serve: Plate the ravioli and vegetables and finish with a sprinkle of freshly grated Parmesan cheese, if desired, for added richness and depth.
Notes
- Use fresh ravioli for the best texture and flavor, but frozen ravioli can work in a pinch if cooked according to package instructions.
- If you prefer a vegan version, omit the Parmesan cheese or substitute with a vegan cheese alternative.
- Adjust the amount of crushed red pepper flakes based on your preferred spice level or omit entirely.
- Reserve pasta water when draining ravioli to help bind the sauce and keep the dish moist.
- Fresh herbs can be varied according to what you have on hand, such as thyme or oregano, for a different flavor profile.
