  • 1/3 cup honey or maple syrup


Instructions

  1. Mix Dry and Wet Ingredients: In a large mixing bowl, combine the old-fashioned oats, vanilla protein powder, creamy peanut butter, honey (or maple syrup), and shredded coconut. Stir well until the mixture is sticky and holds together.
  2. Fold in Chocolate and Salt: Gently fold in the dark chocolate chips and a pinch of sea salt to evenly distribute them throughout the mixture without breaking up the chocolate chips.
  3. Shape the Balls: Using about 1 tablespoon of the mixture for each, scoop and roll into bite-sized balls using your hands, ensuring they are compact and hold their shape.
  4. Chill: Place the rolled balls onto a parchment-lined tray and refrigerate for 30 minutes to firm up before coating.
  5. Melt Chocolate: While the balls chill, melt dark chocolate in the microwave or over a double boiler until smooth and pourable.
  6. Dip in Chocolate: Remove the balls from the refrigerator and dip each one halfway into the melted chocolate. Let the excess chocolate drip off before placing back on parchment paper.
  7. Garnish and Set: Sprinkle additional shredded coconut over the chocolate-covered section of each ball while the chocolate is still warm. Allow the balls to cool completely so the chocolate sets firm.
