- 1 cup vanilla protein powder
- 1/2 cup unsweetened shredded coconut, plus extra for garnish
- 1/2 cup dark chocolate chips

- 1/2 cup creamy peanut butter
- 1/3 cup honey or maple syrup
Instructions
- Mix Dry and Wet Ingredients: In a large mixing bowl, combine the old-fashioned oats, vanilla protein powder, creamy peanut butter, honey (or maple syrup), and shredded coconut. Stir well until the mixture is sticky and holds together.
- Fold in Chocolate and Salt: Gently fold in the dark chocolate chips and a pinch of sea salt to evenly distribute them throughout the mixture without breaking up the chocolate chips.
- Shape the Balls: Using about 1 tablespoon of the mixture for each, scoop and roll into bite-sized balls using your hands, ensuring they are compact and hold their shape.
- Chill: Place the rolled balls onto a parchment-lined tray and refrigerate for 30 minutes to firm up before coating.
- Melt Chocolate: While the balls chill, melt dark chocolate in the microwave or over a double boiler until smooth and pourable.
- Dip in Chocolate: Remove the balls from the refrigerator and dip each one halfway into the melted chocolate. Let the excess chocolate drip off before placing back on parchment paper.
- Garnish and Set: Sprinkle additional shredded coconut over the chocolate-covered section of each ball while the chocolate is still warm. Allow the balls to cool completely so the chocolate sets firm.
