Ingredients
Scale
Meat and Beans
- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
Vegetables and Seasoning
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies, undrained
- 1/2 cup onion, chopped
- 1 packet taco seasoning
- Salt and pepper to taste
Topping
- 2 cups frozen tater tots
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (optional)
Instructions
- Brown the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat to remove grease and improve flavor.
- Mix Ingredients: Stir in the taco seasoning, diced tomatoes with green chilies, chopped onion, black beans, kidney beans, and corn into the browned beef. Cook the mixture for 5 minutes, stirring occasionally to blend flavors. Season with salt and pepper to taste.
- Layer in the Slow Cooker: Transfer the beef and bean mixture into the slow cooker. Spread it evenly across the bottom for uniform cooking.
- Add Tater Tots: Arrange the frozen tater tots in a single layer on top of the beef mixture in the slow cooker to ensure they cook evenly and become crispy.
- Cook: Cover and cook on low for 4 to 5 hours until the tater tots are golden brown and crispy, and the flavors have melded together.
- Add Cheese: Sprinkle the shredded cheddar cheese over the tater tots. Cover again and cook for an additional 10 to 15 minutes until the cheese is melted and bubbly.
- Serve: Serve the casserole hot, optionally topped with sour cream for extra creaminess and flavor.
Notes
- You can substitute ground turkey for a leaner option.
- For extra heat, add diced jalapeños or a dash of hot sauce.
- If you prefer a crispier topping, you can briefly broil the casserole after slow cooking, watching carefully to avoid burning.
- Make sure to drain and rinse beans well to reduce sodium and improve texture.
- Leftovers store well in the refrigerator for up to 3 days.
