Sosaties are a flavorful South African dish consisting of marinated lamb or chicken skewers grilled to perfection with a delightful combination of dried apricots, bell peppers, and onions. Meat and Marinade
- 1.5 pounds boneless lamb or chicken thighs, cut into chunks
- 3 cloves garlic, minced
- 2 tablespoons curry powder
- 2 tablespoons brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 bay leaves
Vegetables and Fruits
- 1 cup dried apricots
- 2 red bell peppers, chopped into chunks
- 2 yellow bell peppers, chopped into chunks
- 1 large red onion, cut into squares
Instructions
- Preheat Grill or Oven: Preheat your grill or oven to 400°F (204°C) to prepare for cooking the sosaties.
- Prepare Marinade and Marinate Meat: In a large bowl, whisk together olive oil, apple cider vinegar, brown sugar, minced garlic, curry powder, salt, and black pepper. Add the bay leaves and the cut meat pieces to the bowl, ensuring they are fully coated. Cover and marinate for at least 4 hours or preferably overnight for deeper flavor.
- Prepare Cooking Surface: Oil the grill grates to prevent sticking or line a baking sheet with foil if using an oven.
- Assemble Skewers: Thread the meat chunks, dried apricots, red and yellow bell peppers, and red onion pieces alternately onto skewers, evenly distributing the ingredients.
- Grill Sosaties: Place skewers on the grill and cook for 10 to 12 minutes, turning occasionally to ensure even cooking and light charring on all sides.
- Brush with Marinade: During the last few minutes of grilling, brush the sosaties with the reserved marinade to enhance flavor and keep the meat moist.
- Rest and Serve: Remove skewers from the grill and let them rest for 5 minutes to allow juices to redistribute. Serve hot for best taste.

- For a more tender meat texture, marinate overnight instead of just 4 hours.
- If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
