Pudding Base

- 8 tablespoons Hills Bros White Chocolate Caramel Cappuccino
Chocolate Dipped Berries
- Assorted berries (such as strawberries, blueberries, raspberries) as desired
- 1/2 cup dark chocolate, chopped
- 1/2 cup milk chocolate, chopped
- 1/2 cup white chocolate, chopped
Instructions
- Soak Cashews: Soak the 2 cups of unsalted cashews in 2 cups of coconut milk overnight or for at least 4 hours to soften them and prepare for blending.
- Drain Cashews: Drain the soaked cashews well, discarding the soaking coconut milk, and add them to a high-powered blender.
- Blend Pudding Base: Add 1 cup of fresh coconut milk, melted coconut oil, maple syrup (if using), melted white chocolate, and 8 tablespoons of Hills Bros White Chocolate Caramel Cappuccino to the blender. Blend everything until completely smooth and creamy.
- Chill Pudding: Pour the creamy pudding mixture into small glass bowls or cups and refrigerate for at least 2 to 4 hours, or until firm and set.
- Melt Chocolates & Dip Berries: While the pudding chills, melt the dark, milk, and white chocolates separately using a double boiler or microwave. Dip the assorted berries into the melted chocolates and allow them to set on parchment paper.
