Ingredients
Scale
Dairy
- 4 cups milk
- 1 cup heavy cream
Eggnog Base
- 4 large eggs
- 1 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
Optional
- 1/2 cup rum (optional)
Instructions
- Heat Milk and Cream: In a saucepan, combine the milk and heavy cream and warm over medium heat until hot but not boiling, preparing the base for the eggnog.
- Whisk Eggs and Sugar: In a separate bowl, vigorously whisk the large eggs and sugar together until the mixture becomes pale and slightly thickened to ensure a smooth texture.
- Temper the Eggs: Gradually pour the warm milk and cream mixture into the egg and sugar mixture, whisking constantly to prevent the eggs from curdling.
- Return to Heat: Pour the combined mixture back into the saucepan and place it over low heat to cook gently without boiling.
- Add Flavorings: Stir in the vanilla extract, ground cinnamon, and nutmeg to infuse the liquid with warm holiday spices.
- Cook Until Thickened: Continue cooking the mixture on low heat for about 10 minutes, stirring constantly, until it thickens slightly and coats the back of a spoon.
- Remove from Heat and Add Rum: Take the saucepan off the heat and stir in the optional rum for a festive kick.
- Cool and Refrigerate: Allow the eggnog to cool to room temperature, then cover and refrigerate until chilled, usually at least 2 hours.
- Serve and Garnish: Serve the chilled eggnog in glasses, garnished with a sprinkle of extra ground cinnamon for a festive touch.
Notes
- If you prefer a non-alcoholic version, omit the rum altogether.
- Make sure to whisk constantly during cooking to avoid scrambling the eggs.
- Use fresh, high-quality eggs for best flavor and safety.
- Refrigerate for several hours or overnight to let flavors meld and chill thoroughly.
- Serve in chilled glasses to keep the eggnog cool longer.
