Description

Lazy Cream Cheese Pickle Rolls are a quick and easy appetizer or snack featuring soft flour tortillas spread with creamy cream cheese, seasoned with garlic powder and fresh chives, then filled with crunchy dill pickle spears and rolled tightly. These no-cook, bite-sized rolls offer a delightful combination of creamy, tangy, and savory flavors perfect for parties or light bites.

Ingredients

Scale

Main Ingredients

  • 8 oz cream cheese, softened to room temperature
  • 4–6 dill pickle spears, drained and patted dry
  • 4 large flour tortillas (or wraps)
  • 1/2 to 1 teaspoon garlic powder, to taste
  • 2 tablespoons fresh chives or green onions, finely chopped (optional)

Instructions

  1. Prepare Your Ingredients: Leave the cream cheese at room temperature for about 10 minutes to soften, ensuring it is easy to spread. Drain and pat dry the dill pickles thoroughly to keep them crisp inside the rolls.
  2. Spread the Cream Cheese: Lay one flour tortilla flat on a clean surface and use a butter knife or spatula to spread a generous, even layer of the softened cream cheese across the entire surface of the tortilla.
  3. Add Seasonings and Pickles: Sprinkle garlic powder evenly over the cream cheese for added flavor. If using, sprinkle the finely chopped fresh chives or green onions across the surface. Arrange the dill pickle spears in a straight line along one edge of the tortilla for rolling.
  4. Roll Them Up: Carefully roll the tortilla tightly starting from the edge with the pickles, applying gentle pressure to keep the roll secure. If needed, use a small amount of extra cream cheese as glue to seal the end of the roll.
  5. Slice Into Bite-Sized Pieces: Using a sharp knife, slice the rolled tortilla into approximately 1-inch pieces to create bite-sized pinwheels. For cleaner, neater slices, refrigerate the entire roll for about 15 minutes before slicing.

Notes

  • For best results, use room temperature cream cheese to make spreading easier.
  • Pat pickles dry to prevent soggy rolls and maintain crispness.
  • Chill rolls before slicing to help maintain shape and produce clean cuts.
  • These rolls are best served fresh but can be refrigerated for up to 24 hours.
  • Optional: Substitute flour tortillas with gluten-free wraps if desired.
