Description

These Tangerine Zucchini Popsicles are a refreshing and healthy frozen treat combining the bright citrus flavor of tangerines with the subtle earthiness of zucchini. Sweetened naturally with pure maple syrup and creamy coconut milk, these dairy-free popsicles are perfect for a light, guilt-free snack on hot days.

  • 1 lb tangerines (about 5–6), seedless (or substitute with oranges)
  • 1 whole zucchini, peeled and sliced

  • 3/4 cup coconut milk (or milk of choice), plus more as needed
  • 1/4 cup pure maple syrup (or sweetener of choice), plus more to taste
  • 1 tsp pure vanilla extract


Instructions

  1. Prep Ingredients: Peel the tangerines and separate them into segments. Peel the zucchini and cut it into 1/2-inch slices to prepare for freezing.
  2. Freeze: Arrange the tangerine segments and zucchini slices in a single layer on a baking sheet. Place in the freezer and freeze for 4 hours or until the pieces are completely solid.
  3. Process Base: Transfer the frozen tangerine segments and zucchini slices into a food processor. Pulse until the mixture becomes crumbly, scraping down the sides of the bowl as needed to ensure even processing.
  4. Blend to Creaminess: Add the coconut milk, pure maple syrup, and vanilla extract to the food processor. Optionally, add orange zest for a stronger citrus flavor. Blend the mixture until it becomes thick and smooth, adding more milk if necessary to achieve a creamy consistency.
  5. Taste & Adjust: Taste the blended mixture and add additional sweetener if desired to suit your preference, blending again briefly to incorporate.
  6. Freeze: Spoon the thick mixture into popsicle molds evenly. Insert sticks and freeze for at least 4 hours, or until completely firm.
  7. Serve: Remove the popsicles from their molds. Serve immediately for a cool and refreshing treat.

Notes

  • You can substitute tangerines with oranges if tangerines are not available.
  • Maple syrup can be replaced with honey or agave nectar according to taste or dietary preferences.
