Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Make the teriyaki sauce: In a small saucepan over medium heat, combine the teriyaki sauce, soy sauce, honey, minced garlic, and grated ginger. In a separate small bowl, whisk the cornstarch with water to create a slurry, then stir this into the saucepan mixture. Cook, stirring constantly, until the sauce thickens to a glossy consistency.
  3. Combine casserole ingredients: In a large mixing bowl, mix the cooked diced chicken, cooked white rice, steamed broccoli florets, sliced carrots, and chopped red bell pepper. Pour the thickened teriyaki sauce over the ingredients and stir thoroughly to evenly coat everything.
  4. Assemble the casserole: Transfer the mixture into the prepared baking dish and spread it out evenly. Sprinkle the shredded mozzarella cheese evenly over the top of the casserole.
